Belinda's Nana Jones' Welsh Cake Recipe

Ingredients

  • 8oz self raising flour

  • 4oz fat ( she used marj and a little lard, I use all butter)

  • 3oz castor sugar

  • 1 egg and a little milk

  • We like to add a very generous sprinkle of cinnamon and sultanas

  1. In a bowl rub together the flour, spices, sugar and butter, until they look like breadcrumbs.

  2. Add sultanas, egg, milk and combine until a soft dough.

  3. I like to turn it out and knead it together at this point.

  4. Roll out & cut.

  5. Heat a bake stone or heavy based frying pan.

  6. Rub a tiny bit of butter on the stone, bake on either side for a few minutes until they feel firm when pressed.

  7. Transfer & sprinkle with sugar whilst still hot.
